Ensalada de cebolla y tomate (Onion and tomato salad)

Salads in Ecuador are sometimes an unexpected adventure.  Not knowing Spanish very well Timothy 1 ordered this salad thinking it would be similar to a chef salad.  It was an unexpected treat. Four out of seven Downings highly recommend this refreshing salad.    

Ingredients

  • 1 ½ small red onions
  • Juice of 3 limes
  • 1 tablespoon avocado oil
  • 3 good sized tomatoes
  • 1 tablespoon cilantro 
  • 1 tablespoon salt
  • 1 avocado  Sliced and cubed
  • ⅓ lb of mozzarella cheese cubed 

Instructions

First.  Cut the onion in half, slice very thin and place in a bowl

Then.  Sprinkle with salt and set aside for 10 minutes

Then.  Add warm water and let soak for 10 minutes

Then.  Drain and rinse the onions

Then.  Add lime juice and let set until the onions start to turn pale.

Then.  Dice the tomatoes

Then.  Mix the onions, tomatoes, oil, mozzarella, avocados, and cilantro. Taste and add salt if necessary.

Enjoy.

Note:

Variations of this salad can also include thinly sliced carrots, bell peppers, cucumbers, radishes, chopped lettuce or salad greens.
