In the Sierra after the first rain of the rainy season you will see little holes in the ground. The holes are made by beetles coming up to the surface. When this happens people collect them early in the morning. Ecuadorians will eat the beetles, known as katsos. They are boiled and then fried. They have a crunchy texture and a smoky flavor.
